Scheduled during the harvest season, this masterclass celebrates the abundance of fresh, seasonal produce. Discover first-hand how Chef Theo transforms these ingredients into culinary masterpieces and unveils the secrets behind two recipes from his celebrated Verdura cookbook.
Featured dishes include Tenderstem broccoli with mezze maniche, a delightful fusion of flavours, and roasted sweet potato and zucchini risotto. As a special treat, guests will receive a signed copy of Chef Theo’s cookbook, making this masterclass a truly memorable experience.

Discover the essence of Frescobaldi’s legacy through an exclusive menu curated by Chef Theo Randall, highlighting the diverse flavours and terroirs embodied in each wine.
Begin your journey with a tantalising selection of canapés, including Bruschetta with datterini tomatoes and chopped burrata, Chicken liver crostini, and Pasta frolla with Swiss chard, sweet onions, ricotta and parmesan cheese, perfectly paired with Leonia Pomino Brut.
Indulge in our antipasto, featuring Sformato di fontina e zucca – a baked delica squash and fontina cheese soufflé with Italian spinach, cream and parmesan, accompanied by Pomino Bianco DOC.
For the primo, delight in Panzotti – homemade pasta filled with mixed greens, Italian sausage, porcini and portobello mushrooms, paired with Terre More and Nipozzano Chianti Rufina ‘Vecchie Viti’.
Savour the secondo course of Scamone di agnello – grilled and roasted lamb rump with chickpeas, tomatoes, carrots, rainbow chard and lamb jus, complemented by CastelGiocondo, Brunello di Montalcino DOCG.
